10 miles + 5 miles...dang, I should have done 1 more for 16 on the 16th😱 But I know some of you have asked what about my shoulder...so here's the 411... It was NOT sprained (I didn't think it had been) BUT due to an uncomfortable plane ride AND a not so good night's rest AND the cold weather, my whole shoulder was tight and eventually led up to the sharp pains on my left shoulder area. Solution...have my boss and chiropractor adjust me (on Monday) AND let me tell you...I screamed because initially the pain was there the instant he started to push but hearing everything release...WOW...I was back to normal and could feel the pain dissipate. So a rest day was taken yesterday (because I DO listen to my body) AND here I am again... When you are craving Thai curry, you make Thai curry! One of our favorite meal prep recipes, we don’t eat salad every single day! Meal prep One-Pot Thai Curry Ingredients: 2 tbs organic coconut oil 5 tbs Panang Curry Paste 2 cans coconut milk (14 oz each can) 3 lb chicken breast, cubed 1 green bell pepper, julienned 1 red bell pepper, julienned 1 carrot, julienned 1 can bamboo shoots, drained (19 oz can) 1 cup organic frozen peas 1/2 tsp black pepper 3 tbs fish sauce Drizzle of fresh lemon juice Fresh cilantro sprigs, chopped, to garnish (optional) Lemon wedges to garnish (optional) Instructions: 1. Heat coconut oil in a large saucepan over medium heat. 2. Add panang curry paste and stir for 2-3 minutes. 3. Add coconut milk, stir frequently till smooth, for about 2-3 minutes. 4. Add chicken cubes, stir frequently till boiled and then covered and turn heat to low and cook for 15 minutes. 5. Add frozen peas, bamboo shoot and carrot, covered and simmer for 5 minutes. 6. Add bell peppers and black pepper, covered and simmer for 5 minutes. 7. Add fish sauce and lemon juice and stir well for 1 minute. Served with sweet potato brown rice and steam veggies. Yesterday after doing my morning workout I went upstairs and was talking to my husband. I meant to say that I had been “downstairs exercising” but what I said was that I was “downsizing”. And it totally fit. The more I think about it, the more I like the term downsizing in reference to my body. Usually when people “downsize” they are moving to a smaller house, which means getting rid of things they have accumulated over the years. It’s the same thing with our bodies. We accumulate things (such as fat, toxins, negative thoughts, etc) that we need to get rid of. So, we need to “downsize” so that we can get rid of those “things” and be/feel lighter. I shared my weight loss goal in an earlier post and I have been working on eating healthier and exercising daily to help meet that goal. I am also doing those things to help me be healthier in general. I love the way I feel after I exercise. Sometimes it is really hard to get myself out of bed early before anyone else wakes up, but it is so worth it. And I have more energy throughout the day.
